Some of my favorite covers, in no order, with the original artist in parentheses...

"Cars" - Fear Factory (Gary Numan)
"Tainted Love" - Marilyn Manson (Gloria Jones, not Soft Cell. Theirs was a remake, too.)
"Born To Be Wild" - Zodiac Mindwarp & The Love Reaction (Steppenwolf)
"Hard Luck Woman" - Garth Brooks (KISS)
"Hold It Right There"(live) - Big Dave & The Ultrasonics (Eddie Vinson)
"I Stand Accused"(live) - Big Dave & The Ultrasonics (Steve Ferguson)
"Jump, Jive, & Wail" - Brian Setzer Orchestra (Louis Prima)
"Oops I Did It Again" - Children Of Bodom (Britney Spears)
"18 And Life" - Nina Gordon (Skid Row)
"Smooth Criminal" - Alien Ant Farm (Michael Jackson)
"Ring of Fire" - Social Distortion (Johnny Cash)
"Down With The Sickness" - Richard Cheese (Disturbed)
"Hurt" - Johnny Cash (NIN)
"A Little Help From My Friends" - Joe Cocker (The Beatles)

And my all time favorite...

Wierd Al Yankovic's Polka Medleys from hell that he does on every album. Love him or hate him, they are friggin' brilliant.

"Thank You" ZZ Top (Sam and Dave)
"Gloria" The Doors (Van Morrison)
"Live and Let Die" Guns 'n Roses (Paul McCartney)
"Come Together" Aerosmith (The Beatles)
"Cat Scratch Fever" Motorhead (Ted Nugent)
Now, to the other end of the Musical spectrum:
"Mother Nature's Son" John Denver (The Beatles)
"Paradise" John Denver (John Prine)

• I’m Not Your Steppin’ Stone (The Monkees) – originally done by Paul Revere & The Raiders
• Walk, Don’t Run (The Ventures) – originally done by Johnny Smith

• Misirlou (Dick Dale & The Deltones) – originally by Michalis Patrinos
• Crossroads (Cream) – originally done by Robert Johnson
• Move It On Over (George Thorogood & The Destroyers) – originally done by Hank Williams, Sr.
• Memphis (Johnny Rivers) – originally done by Chuck Berry
• Call Me The Breeze (Lynyrd Skynyrd) – originally done by J. J. Cale
• Cocaine (Eric Clapton) – originally done by J. J. Cale

I'm learning alot about songs and their origins.
I didn't know that Nazareth covered Love Hurts.
Interesting thread indeed.

Rufus Thomas originally did Walking The Dog in 1964

Here are some more cover tunes that Santana did.
Oye Como Va by Tito Puente
Stormy by Dennis Yost & The Classics Four
She's Not There by The Zombies

Most people think that Love Hurts was originally done by Nazareth; but, it was done by several artists before Nazareth did it. Of Course, their version was the biggest hit of the song.

Love Hurts was written and composed by Boudleaux Bryant and recorded by the Everly Brothers in July 1960. It was released that December on the album A Date With the Everly Brothers.

Roy Orbison released Love Hurts as the B-side to "Running Scared" in March 1961. It would then appear as a track on the album Crying, released in May 1962.

The song was later recorded by Gram Parsons and Emmylou Harris for the Parsons album Grievous Angel, which was released in 1974.

In the fall of 1975, it would be transformed into a highly successful hard-rock ballad by Nazareth. This was the only rendition of the song to become a big hit single, reaching #8 on the Billboard Hot 100 in early 1976.

In October 1975 it was released as a single taken from the album Short Cut Draw Blood by Jim Capaldi, reaching number five in the UK chart, and also charted worldwide.

Love Hurts was also released in 1975 by Cher

It was written and recorded by Rufus Thomas in 1963, but it was never released in any quantity until the Stones did it on their 1st album in 1964.

Elvis didn't write Little Sister either.

One of the most famous cover songs of all time is Wild Thing by The Troggs. The first version was done by a group called The Wild Ones in 1965. The song was written by Chip Taylor, a New York City singer and songwriter who is the brother of Jon Voight and uncle of Angelina Jolie.

Chip Taylor also wrote Angel Of The Morning, a hit first for Merrilee Rush in 1968, then again in 1981 for country-pop singer Juice Newton, I Can't Let Go (The Hollies), Make Me Belong to You, I Can Make It With You (Jackie DeShannon), Any Way You Want Me (The Troggs), Step Out of Your Mind, Country Girl City Man, I'll Hold Out My Hand, and Try (Just a Little Bit Harder) (Janis Joplin), Sweet Dream Woman (Waylon Jennings), and Son of a Rotten Gambler (Emmylou Harris, the Hollies and Anne Murray).

This is the indefiniative list and I might add more when I remember them, but:
Warren Zevon's version of "Knocking on Heaven's Door" is one of my favorites, I think part of the reason was when he made "The Wind" he was really close to dying of cancer and you can really hear it in his voice, or at least I always thought so.
"Surrender" covered by Less Than Jake, but I think it was originally a Foreigners song.
Of course, "All Along the Watchtower" has to be on the list!
I actually thought that Green Day's cover of John Lennon's "Working Class Hero" was well done despite the fact that I wanted to rip my ears off whenever I heard any of their newer crap...uh..I mean work. But this song was actually pretty good in my opinion.

There was a version of Sting's "Fields of Gold" that I heard once, it might have been the Eva Cassidy version but don't quote me on that, anyway it was absolutely breathtakingly beautiful

They aren't a national act, but Flord's cover of "House of the Rising Sun" rockses my sockses
Worth dying for. Worth killing for. Worth going to hell for. Amen.
