The Pepperoni Ratio
The Pepperoni Ratio
During one of our shows this past weekend I made a food run & picked up some pizza. I ordered four slices with pepperoni. When I opened the box I was totally bummed to find that each slice had only one piece of pepperoni! These slices were approx 4" square & the pepperoni was the size of a quarter. I feel that there should be some kind of "industry standard" for the use of pepperoni. I'm thinking one piece of pepperoni for every one and a half square inches of pizza. Sounds fair right? Thoughts?

At my shop, back in the day, I would start at the outer edge (doesn't matter where) and begin around the pie, the edge of each pepperoni slightly overlapping the one before it, until I got to the middle.
Basically, it's your "can't-see-the-cheese-for-the-meat" scenario, which was touched upon previously. Then, I would sprinkle some cheese on top of that, which sealed everything together nicely.
Any shop giving you less is being a cheap ass. Take your business elsewhere, old sKool.

I have had many of BDR's pizzas in my day! They were the best!BadDazeRob wrote:At my shop, back in the day, I would start at the outer edge (doesn't matter where) and begin around the pie, the edge of each pepperoni slightly overlapping the one before it, until I got to the middle.

I still cannot believe that there was a time when Rob owned a pizza shop.

I have video of BDR singing "The Bear Went Over The Mountain" On Live TV (He also was accompanying himself on a fisher price piano and had a mullet that went past his shoulders). All that and a Pizza Chef too!bassist_25 wrote:I still cannot believe that there was a time when Rob owned a pizza shop. .

Personally, I like the motherfXcking thing covered in Pepperoni. I don't even want to see pizza, I want to see a giant fXcking pepperoni in the box covering a crust, cheese, and sauce. But I have to admit, I bought a BBQ Chicken pizza and added bacon on it. Oh man, that's the greatest. When we get popular and I can quit Wal-Mart, I'm going to hire someone to make me BBQ Chicken & Bacon Pizzas and buy Tradewinds Extra Sweet Southern Style tea. The ultimate snack for me!

Re: The Pepperoni Ratio
For the square slab-pizza sold by the cut, one pepperoni per cut IS the industry standard. It appeared quarter-sized because it was probably cooked up to create a small edi-bowl of pepperoni juice (100% saturated fat).BadDazeGuitar wrote:During one of our shows this past weekend I made a food run & picked up some pizza. Al's Pizza/FeFi on 22nd St and 6th Av in Altoona doubles this ratio with TWO pepperonis per slab.

Actually Best Way is where this pizza came from, down around Hopewell. It tasted great but lacked big time on the pepperoni. Jimi, you're right-crust kicks ass. I really like Papa Johns with that garlic dipping sauce. Mmmmm. I'm gettin' hungry again & I just finished lunch. Oh yeah Rob, since you made such tasty pies how about whippin' one up for the next show? We should start callin' you Dough Boy!

You guys can keep your pizza.. granted, I like pizza, but if given this choice..Dragan Kalasa wrote:Sweet...we could do a covered dish show. Play some music, make some food.
Pizza (in any form EXCEPT buffalo chicken pizza w/ ranch dressing)
or
Cheesesteak, and Cheese fries (waffle sized fries)
choice 2 for me!

Yeah, I live like 3 miles from that Best Way in Hopewell. But I think as far as Best Way, they usually make the slices with one piece of pepperoni. At least the one's in Wolfsburg, Everett and Hopewell. But then again, if I ask for 3 or 4 slices I usually get 4-5. So for me it evens out.BadDazeGuitar wrote:Actually Best Way is where this pizza came from, down around Hopewell. It tasted great but lacked big time on the pepperoni. Jimi Hatt, you can keep the corners, because I ask specifically for center cuts.
AtoMikEnRtiA, I do have to agree with you though. Cheesesteak and waffle fries with cheese are the way to go. But I'm one of those specially formed people that can eat both. So, I'll take a 12" cheesesteak, Lrg order of waffle fries with cheese and 4 slices of pizza, TO GO! HAHA! Oh yeah, and a Diet Coke, nah fXck that...give me a Capt. & Coke.

that's because you're in OHIO.. There aint shit out there.. Nothing, not even whores!Starr wrote:Claysburg is the best for the square....if you're lucky, you might get 1 and 1/2 pepperoni. Then Don's in Newry. I have yet to see a square piece of pizza here in Ohio. They cut their pies in strips or squares. They need a lesson in pizza making. There aren't enough Italians out here, I think.
