Toona is right on how they classify for census reasons. I do work for the National Institute of Health and when I see a client we have to register these things on the NIH census: Race. There are only 3 choices: Caucasion, Black, Asian. Ethnicity: 2 choices: Hispanic or Non-Hispanic. That's it. I have seen people write in everything from Irish to Loatian to Russian (there are a lot of Russians in State College). Then I change it to Hispanic or non-Hispanic.
